A new Japanese fusion restaurant is preparing to enter McLean’s increasingly busy dining scene with sushi, izakaya plates and Western dishes reworked with Japanese flavors.
Sho Sushi & Izakaya expects to open sometime in February at 6828D Old Dominion Drive, replacing Tami Sushi. Co-owner Pattie K, who asked to be identified by her first name, described the concept as premium, casual Japanese dining with a Western twist.
The founders developed the restaurant after spending more than a decade working in the Japanese restaurant industry. Pattie said their goal is to respect traditional Japanese flavors while applying modern techniques and influences.
Sho’s menu will include sushi and izakaya-style small plates such as grilled meat skewers, karaage fried chicken and gyoza. More elaborate fusion offerings will include pan-roasted halibut served with miso dashi risotto, shiitake mushrooms and yuzu sauce.
Familiar Western dishes will also get Japanese touches. Ravioli, for example, will incorporate Japanese ingredients and techniques intended to complement and balance its flavors.
The approximately 1,800-square-foot restaurant is expected to seat 40 to 45 guests. Storefront signs are already in place, while an ABC license permitting alcohol service remains pending.
Sho will open on the same block as the recently launched Otosan Ramen and near established Japanese restaurants Miyagi Restaurant and Tachibana. Despite that competition, its owners believe the combination of Japanese and Western cooking will give diners something distinctive.
Pattie said McLean’s growth, accessibility and reputation for quality dining made it a natural location for the new restaurant. The team hopes to build lasting connections in the community while sharing its approach to Japanese cuisine.
